Chicken Chips Soup is Perfect for a Cold Winter Day

2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon ground black pepper 3 tablespoons cold butter 3/4 cup shredded Cheddar cheese 1/2 cup milk 1 cup chicken broth 1/4 cup chopped onion 1 celery rib, chopped 2 garlic cloves, minced 4 cups cooked, diced chicken cheddar cheese, shredded (optional) sour cream (optional)

Chicken chips soup is a hearty, warming soup that is perfect for a cold winter day. It features layers of rich, comforting flavors, and it's easy to make. The key to this soup is the chicken chips. These are little nuggets of cooked chicken that are diced into small pieces. You can either use leftover cooked chicken or cook some fresh chicken breasts for the soup. To make the chicken chips, start by cutting the cooked chicken into small pieces. You should aim for nugget-sized pieces. Then, heat a large skillet over medium heat and add the chicken. Cook the chicken until it is browned and cooked through, about 5 minutes per side. Once the chicken is cooked, remove it from the heat and set it aside to cool slightly. Once the chicken has cooled slightly, add it to a food processor and pulse until it is finely chopped but not completely smooth. Don't over-process the chicken or it will turn into paste. You want some texture to remain in the chicken chips. Now that you have your chicken chips made, let's move on to the soup. Start by adding the flour, baking powder, salt and black pepper to a large bowl and stir to combine. Then, cut in the butter until it resembles coarse crumbs. Stir in the shredded cheese and milk until well combined. The mixture will be thick but should be able to form a ball when pressed together. If it's too wet, add more flour 1 tablespoon at a time until it reaches desired consistency. Next, spray a large pot with cooking spray and heat over medium heat until hot. Add the dough ball and press down lightly with a spoon to form a flat disc. Let cook for 2-3 minutes before flipping and cooking for an additional 2-3 minutes or until golden brown on both sides. Remove from heat and set aside.. To make the soup, start by adding the onion, celery rib and garlic cloves to the pot and cooking until softened, about 5 minutes. Then add the broth and bring to a simmer before adding the dough disc back in. Break up any large pieces so that all of the dough is incorporated into the soup. Let cook for 2-3 minutes before adding in the cooked chicken chips and 2 cups of water*. Bring to a simmer again before serving hot with shredded cheddar cheese and sour cream if desired
