Chicken Chips Soup is the perfect comfort food!

Ingredients:

-1 rotisserie chicken, skin removed and shredded -6 cups chicken broth -1 cup onion, chopped -3 cloves garlic, minced -1/2 teaspoon dried thyme -1/4 teaspoon pepper -1 Bay leaf -8 ounces diced potatoes -4 ounces Velveeta cheese cubed -1 (12 ounce) can evaporated milk -2 cups corn chips, crushed

Method:

1. In a large pot, combine the chicken, chicken broth, onion, garlic, thyme, pepper and Bay leaf. Bring to a boil over medium heat.     2. Add the potatoes and continue to cook until they are tender, about 10 minutes.   3. Discard the Bay leaf and stir in the Velveeta cheese.    4. Stir in the evaporated milk and corn chips. Heat through until the cheese is melted.     5. Serve hot with some crusty bread for dipping. Enjoy!

  • 1 onion, chopped

  • 2 carrots, chopped

  • 1 turnip, chopped (or any other type of root vegetable)

  • 1 potato, chopped

  • 3 cups vegetable broth (you can also use chicken or beef broth)

  • 2 bay leaves
  • 1 teaspoon dried thyme leaves (or ¼ cup fresh thyme leaves)
  • Salt and pepper to taste optional toppings:
  • ½ cup crème fraîche or sour cream
  • 2 tablespoons chopped fresh parsley leaves

Instructions:

  1. In a large pot over medium heat, sauté the onion, carrots, turnip and potato in olive oil until they are softened.

  2. Add the vegetable broth, bay leaves, thyme and salt and pepper to taste. Bring to a boil and then simmer for 30 minutes.

  3. Remove the bay leaves and then using an immersion blender, blend the soup until it is smooth. Alternatively, you can transfer the soup to a regular blender in batches and blend until smooth.

  4. ladle the soup into bowls and top with crème fraîche or sour cream and chopped fresh parsley if desired. Serve immediately.

1 tablespoon dried parsley flakes

 2 cups frozen mixed vegetables, thawed   1-2 cups chicken chips    Instructions:    In a large pot or Dutch oven, combine the shredded chicken, chicken broth, cream of chicken soup, cream of celery soup, sour cream, mayo, parsley flakes, basil leaves, salt and pepper. Stir well to combine. Add the frozen mixed vegetables and chicken chips. Stir again to combine. Heat over medium heat until heated through. Serve hot and enjoy!

-1 Rotisserie chicken -2 cups of chicken broth -1 can of black beans, drained and rinsed -1 can of corn, drained -1 jalapeño, diced -1 lime, juiced -1 tablespoon of cumin -1 tablespoon of chili powder -Salt and pepper to taste

Instructions:

In a large pot over medium heat, add the chicken broth and bring to a simmer.

Shred the rotisserie chicken and add it to the pot. Add the black beans, corn, jalapeño, lime juice, cumin, chili powder, salt and pepper. Stir until everything is well combined and heated through. Serve in bowls and enjoy!

This recipe is so easy and perfect for using up leftover chicken! Just shred the chicken and add it to the soup. If you don't have any leftover chicken, you can easily cook some up before making the soup.

Ingredients:

1 tbsp olive oil 1 onion, chopped 3 cloves garlic, minced 1 carrot, peeled and diced 2 celery stalks, diced 3 cups chicken stock 1 cup frozen corn 1 chipotle pepper in adobo sauce, minced 1 tsp adobo sauce from the chipotle pepper can 2 cups cooked shredded chicken Salt and pepper, to taste Optional toppings: Shredded cheese Sour cream Chopped green onions or cilantro Directions: 1. Heat the oil in a large pot over medium heat. Add the onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.

  1. Add the chicken stock, corn, chipotle pepper, and adobo sauce. Bring to a boil.

  2. Reduce the heat to low and simmer for 10 minutes.

  3. Add the shredded chicken and salt and pepper to taste. Cook until heated through, about 5 minutes.

  4. Serve with shredded cheese, sour cream, chopped green onions or cilantro if desired.
