Ingredients: 1. 1 tablespoon olive oil2. 1 chicken breast, cut into small chips3. 1 onion, chopped4. 2 carrots, peeled and diced5. 2 celery stalks, diced6. 2 garlic cloves, minced7. 1 teaspoon dried thyme8. ½ teaspoon smoked paprika9. ½ teaspoon ground cumin10. 4 cups chicken stock11. 1 can (15 ounces) chickpeas, drained and rinsed12. salt and pepper to taste13. ½ cup fresh parsley leaves 14. ¼ cup fresh lemon juice

Instructions: 1. Heat the oil in a large pot over medium heat until hot.2. Add the chicken chips and cook until golden brown, about 3 minutes per side.3. Add the onion, carrots, celery, garlic, thyme, paprika, and cumin and cook until the vegetables are tender, about 5 minutes.4. Add the stock and chickpeas and bring to a boil over high heat.5.
